This soup has many different uses. We use it for an enchilada dish - flour tortillas, refried beans, soup mix, and a layer of cheese, served with lettuce and sour cream.
Makes a great dip too! - just add a little more Velveeta. Also good on hamburgers and hot dogs.

16 oz Velveeta Cheese
(Optional 2-3 cups cooked meat of your choice - chopped)
